Cheesy chicken spaghetti with house salad and bread. Just three words. It ain’t easy being cheesy, but this casserole with chicken, cheese, tomatoes, and spaghetti noodles will bring the pleasing, cheesing comfort of pasta to a new level in your life. Born in Anson, Texas, she moved to Nashville to pursue a singing career. While working as a receptionist, record producer Shelby Singleton discovered her, believing her deep-in-the-heart-of-Texas drawl would be perfect for a new Tom T. Hall song. Jeanie C. Riley, picked for her speaking voice and not her singing voice, became the first woman to top both the country and pop charts this week in 1968 with her runaway hit, “Harper Valley P.T.A.” Yep. There it is. As it happens, she was dining on cheesy chicken spaghetti in the staff cafeteria — the one little-known fact that may have helped launch her career. Who knows, maybe she had a mouthful of spaghetti when Singleton first heard her speak?
We will have salmon croquettes available today!
We’ll have our very own Louisiana red beans and rice available all week!

Singer-songwriter Tom T. Hall observes, “The first time with artistic endeavors is, if it’s working, it was your idea, and if it’s not, it’s somebody else’s idea.” We love his old song, “I Love You, Too,” with these great lyrics, “I love little baby ducks, old pickup trucks, slow-movie’ trains and rain. I love little country streams, sleep without dreams, Sunday school in May and hay. And, I love you, too.” Ducks, trucks, trains, and rain. Good stuff.
